{Likely Favorites} Tater Tot Casserole!

A dinnertime staple around here in Likely is a Christensen family dish called Tater Tot Casserole.  Now who doesn’t love tater tots?  Tater Tot Casserole is an easy-to-make, quick all-in-one casserole dinner, which happens to have foods from every food group (except fruits!).  We have the recipe hand-written in the front of a recipe book, but we actually rarely even look at it because we make it so often.  Everyone we know loves it, so I thought I’d share it with all of you!

Ingredients:

  • 1 pound ground beef (the leaner, the better, and I’m sure you could substitute whatever type of ground meat you like to use, i.e. turkey, etc.)
  • 1/2 medium white onion (diced)
  • 1 can cut green beans (drained) – we actually use 2 cans sometimes to get some extra veggies in!
  • 2 cans cream of mushroom soup
  • 1 2-pound bag of frozen tater tots
  • cheddar cheese (grated) – we’ve also used pepper jack, yum!

Step 1:  Preheat your oven to 350 degrees.  Brown the ground beef with the onion and sautee until the onions are clear and the beef is browned.  Drain the fat from the mixture.

Step 2: Spray a 9″x13″ casserole dish (we use glass ones) with some cooking spray, and then add the ground beef mixture to the bottom of the dish.

Step 3: Add a layer of green beans on top of the meat.

Step 4:  In a medium bowl, mix the 2 cans of cream of mushroom soup with a little milk to thin the soup.  Add that to the top of the green beans.

Step 5:  Lay the tater tots on top of the soup as shown.  Pop it in the oven for 35 minutes.  During this time, my husband will be busy washing the other dishes as he is a PRO at simultaneously cooking and cleaning!

Step 6: Take the casserole out of the oven.  Grate enough cheese to cover the tater tots.  Pop it back in the oven for about 10 minutes, until all of the cheese is melted.

Step 7: Enjoy!  It’s also great as a leftover for lunch!

    my aunt made this for me as a kid and i LOVED it! I need to try and make it sometime!

    My favorite two recipies:

    Homemade Mac and Cheese
    1/2 white onion (diced)
    2 tbsp. butter
    1 tbsp. flour
    1 1/2 cups milk
    2 cups american cheese (Guessing on this, I don’t usually measure, whatever tastes right!)
    2 cups cheddar cheese
    2 cups large elbow macaroni (I usually use half the bag)

    1. Put the macaroni in boiling water to cook
    2. Saute the onion in the 2 tbsp. butter
    3. Add the flour and mix with the butter and onion to begin a rue (sp?)
    4. Add the milk
    5. Begin to add the cheese, stir until all cheese is melted
    6. By this time mac should be done, drain and put into baking dish, usually we use a 13″ X 9″ pyrex
    7. You can add stuff to the top, bread crumbs are delicious as well as garden tomatoes!
    8. Bake for about 30 minutes at 350 until the top gets golden and crispy

    Got this out of a cookbook, so easy and everyone LOVES it!

    Chicken Enchiladas (a little more work intensive but SO WORTH IT! all my guests call this “the bomb”). This recipe is courtesy of my mom!

    1 lb. of chicken breast
    1 can chicken stock
    Ground cumin
    Jack cheese (about 1/2 block)
    Tortillas
    1 can green enchilada sauce (we use La Victoria)

    1. Boil the chicken breast in the chicken stock add a little ground cumin (i just throw it in). Boil until cooked all the way through
    2. Shred (or chop) the chicken breast
    3. Grate the jack cheese
    4. Pour the enchilada sauce in a bowl
    5. Dip the tortillas in the sauce then add the jack cheese and chicken to each one, roll and put in a 9″ X 13″ pyrex
    6. Save a little bit of cheese (or grate some more) for the top, once all chicken is gone, drizzle the remaining sauce over the top and add the cheese
    7. Bake for about 20-30 minutes until they get golden and crispy on top
